This medium-bodied infused with red chili peppers EVOO spices up beef, pork or poultry when used with meat rubs.  Stir-fry your vegetables with it.  Brush onto hamburger buns before toasting on the grill.  Start your favorite chili or stews with it.  Sprinkle over pizza crust or flatbread to add a little heat.  Pop your popcorn with it.  Put it in your favorite brownie recipe.

Corn & Black Bean Sauté

Ingredients

  • 6 ears fresh corn, kernels removed
  • 2-3 cloves garlic, chopped
  • ¼ c. chopped shallots
  • 1 Tbsp. FROM OLIVES TO OIL Chili EVOO
  • 3 Tbsp. FROM OLIVES TO OIL Avocado Oil
  • 1 can black beans, rinsed and drained
  • 1 ½  tsp. cumin
  • 1 tsp. FROM OLIVES TO OIL  Sea Salt
  • 1 lime
  • 2 Tbsp. fresh cilantro, chopped

Directions

Heat a large skillet over medium heat.  Add both oils to pan, then add the corn and sauté for one minute.  Add shallots and garlic and sauté five minutes.  Season corn with salt and cumin.  Stir in black beans and heat through.  Squeeze in lime juice and stir in cilantro.  Serves 6.
