Company Chicken

Ingredients

  • 3 lbs. chicken pieces
  • 1 cup FROM OLIVES TO OIL Italian  Blend EVOO
  • 1/3 cup FROM OLIVES TO OIL White Balsamic Vinegar
  • 1-2 T. Honey
  • 2-3 tsp. FROM OLIVES TO OIL House Blend seasoning
  • 1 bottle BBQ Sauce, optional

Directions

In a large bowl whisk together oil, vinegar, honey and herb blend.  Add the chicken, turning to coat.  Let the chicken marinate covered and chilled overnight.  When ready to bake, drain the chicken and discard the marinade.  Place chicken pieces in a single layer in a baking dish, being careful not to crowd the chicken.  Bake in a preheated 350 oven for 1 hour.   Serve.  Optional:  Remove from the oven after one hour, brush with the BBQ sauce and finish off on the grill about 10 minutes or until the skin is crispy. Serves 6.
