Raspberry Dark Balsamic Vinegar

This aged Balsamic vinegar is naturally infused with raspberries.  Combine it with FROM OLIVES TO OIL Orange or Lemon EVOO and a little bit of honey for a delicious vinaigrette.  Enjoy it as a marinade for chicken when combined with your favorite flavored FROM OLIVES TO OIL EVOO and  FROM OLIVES TO OIL Italian House blend.  Drizzle it into yogurt.  For dessert, combine it with a sugar syrup and a little cream for a raspberry gelato; or simply boil it down into a glaze to top your favorite ice cream.

Raspberry Red Onion Relish

Ingredients 

  • 1 ½ medium red onion, diced small
  • 1 c. FROM OLIVES TO OIL® Raspberry Balsamic Vinegar
  • ¾ c. granulated sugar
  • ½ c. red/ruby port wine
  • ¼ tsp. salt

Directions

Place all ingredients in a sauce pot over high heat and boil rapidly until the liquid is reduced to a syrup stage. Remove from heat and serve over grilled fish, pork or chicken.  This syrup can also be used as a bruschetta topping or as an accompaniment to your favorite dish. Make in advance to have it “on hand”.  When cooled to room temperature, it will store wonderfully in your refrigerator for up to two weeks.
