Beet This

Ingredients 

  • Beets. Cooked and sliced. (You may use pickled beets as well).
  • Red onion, very thinly sliced
  • Fresh Spinach
  • FROM OLIVES TO OIL® Organic EVOO
  • Goat cheese, one thick slice per serving
  • FROM OLIVES TO OIL®Aged Balsamic Vinegar

Directions

Arrange sliced beets on a plate or platter.  Toss onion slices on top.  In the middle of the “arrangement”, place a portion of the fresh spinach. Drizzle with Organic EVOO.  On top of the spinach, add the slice of goat cheese.  Splash on the balsamic vinegar!  This is a beautiful individual salad or it’s great on a platter for the whole group to enjoy.  Serves 4 to 6.
