Pork Cutlets Diane

For the Sauce

½ C. chicken broth

1/8 C chopped onion

1 clove garlic

½ Tbsp. Dijon mustard

½ Tbsp. Worcestershire sauce

½ Tbsp. tomato paste

For the Pork

½ lb. pork tenderloin, trimmed, and cut on bias into 4 slices (2oz each)

salt and pepper

1 Tbs From Olives to Oil Scallion EVOO

Directions –

Blend broth, onion, garlic, Dijon, Worcestershire, and tomato paste for the sauce in a food processor until onion is minced.

Season pork slices with salt and pepper. Heat oil in saute pan over medium high heat. Add the pork to the hot pan, searing until browned, 2-3 minutes each side, turning once!

Remove pork from pan and keep warm.

ADD the sauce mixture to pan, scraping up any brown bits and simmer until slightly thickened, 3 minutes. Return pork to the pan along with drippings; simmer to warm through. Season with salt and pepper, then spoon sauce over pork to serve.
